Cappadocia Travel Guide

A Landscape Like No Other

Cappadocia, in the heart of Turkey's Anatolian plateau, was shaped by ancient volcanic eruptions whose ash hardened into soft rock, then eroded into cones, columns and "fairy chimneys". For centuries people carved homes, churches, dovecotes and entire underground cities into this stone. Today the region is famous for sunrise hot-air balloon flights, cave hotels and hikes through valleys painted pink, cream and ochre. Most visitors base themselves in a small town such as Göreme, Ürgüp or Uçhisar and explore from there.

Choosing Your Season

Spring (April to early June) and autumn (September to October) offer mild days, cool nights and good walking weather, and are the most popular times. Summer is hot and dry by day but often pleasant at night. Winter is cold and can bring snow, which makes the fairy chimneys especially beautiful and hotels quieter, though some outdoor activities are limited. Balloon flights run throughout the year but are frequently cancelled by wind or poor visibility in any season, so allow more than one morning if a flight is your priority.

The Essential Experiences

Hot-air balloon flight. Dozens of balloons lift off at dawn over the valleys around Göreme. Book with a licensed operator and check what the price includes. Even if you do not fly, watching the launch from a viewpoint is memorable.

Göreme Open-Air Museum. A UNESCO-listed group of rock-cut monasteries and churches with Byzantine frescoes, some remarkably vivid. The separately ticketed Dark Church is one of the best preserved.

Underground cities. Derinkuyu and Kaymaklı descend many levels below ground, with ventilation shafts, stables, chapels and rolling stone doors used to protect residents. Tunnels are narrow and low, so they are not ideal for claustrophobic visitors.

Valley hikes. The Rose Valley and Red Valley are best near sunset; Love Valley has striking tall pillars; Pigeon Valley connects Göreme with Uçhisar. Trails are mostly unmarked in places, so use an offline map.

Uçhisar Castle. A huge rock outcrop riddled with old rooms, offering panoramic views across the region.

Ihlara Valley. A green canyon carved by a river, with rock churches along a riverside walking path, often combined with an underground city on a full-day "green tour".

Avanos. A riverside town on the Kızılırmak, Turkey's longest river, known for pottery workshops where you can try the wheel.

Eating and Drinking

The local speciality is testi kebabı, meat and vegetables slow-cooked in a sealed clay pot that is cracked open at the table. Try mantı (small dumplings with yoghurt and garlic butter), gözleme (stuffed flatbreads) and village breakfasts with cheeses, olives, honey and eggs. Vegetarians can rely on lentil soup, stuffed vegetables, meze and gözleme. Cappadocia has a long winemaking tradition, and local wineries offer tastings, particularly around Ürgüp. Finish with Turkish tea, coffee or apricots, which grow abundantly in the region.

Getting There

The two nearest airports are Nevşehir Kapadokya (NAV) and Kayseri Erkilet (ASR), both with domestic flights from Istanbul and, at times, seasonal international routes. Shuttle buses timed to flight arrivals take travellers to the main towns; book these in advance through your hotel. Overnight long-distance buses run from Istanbul and other cities to Nevşehir and Göreme.

Getting Around

Göreme is walkable, and local minibuses (dolmuş) link it with Uçhisar, Avanos, Ürgüp and Nevşehir. Many visitors join organised "red" and "green" day tours, which bundle the main sights with transport. Renting a car or scooter gives freedom to reach viewpoints at sunrise and sunset, and quad-bike and horse-riding tours explore the valleys.
